The Venerable Fat Ho was the second abbot of the monastery during the time 1930 to 1972. During this period of 42 years, with his exceptional vision and ability, he not only built and completed many halls, but established the Lantau Buddhism College, published the Lantau Chronicle, built schools and promoted education, as well as establishing rules for the Buddhist order and revamping the management system of the monastery. He has established a very solid foundation for the subsequent development and major progress of Po Lin Monastery. The Venerable Fat Ho Memorial Hall was built to commemorate his great achievements and contributions, and to encourage others in his track to follow his great steps.

In the Memorial Hall, vegetarian cuisine is served to entertain honourable guests and it has become a "must-have" item for visitors to the monastery. Vegetarian food served by the monastery is prepared with natural materials and in the most delicate methods, meeting health requirements and gratifying the senses.
